Changing values in a card dump

Hi everybody!

I've managed to dump my Mifare Classic 1k card. Now I'm a bit lost. I've converted the binary file to hexadecimals and then gone trough the file but without success of finding any integers, float point, double or anything. Could I get some help here, I want to read a specific value. I know in which sector the value is, that I know through diffing the unused card and the same card after usage. I know the current value but I can't don't now I to change it.

Okey after some further research I think they use the increment feature. Can someone explain how the blocks are constructed please. I've search the whole internet for a explanation without success.
